MEAL PLAN YOUR WEEK: WHAT TO MAKE FOR LUNCH AND DINNER THIS WEEK

If you’ve ever meal planned (or tried), you know that the whole process from figuring out meals to grocery shopping takes up to at least two hours a weekend.

BUT if you meal plan (or have tried), you know how nice it is to know that you have enough food in your house for the week and you won’t go hungry. Since it’s 1) hard to think up new recipes and 2) hard to use what you have in the house without making repeat meals, we’ve thought up a week’s worth of yummy dinners that can transform into lunches through either leftovers, or using ingredients to make a new lunch.

Since we don’t want you to have to click each link to figure out what ingredients you need, we also included the main ingredients needed in each meal.

Monday:

Lunch: Chicken salad sandwich

You will need to meal prep this if you want it fresh. If you make enough, you can use chicken salad for lunch for the next few weeks.

Dinner:

Beef and Mushroom risotto

Beef
Arroboro rice
Heavy cream
Beef broth
Green onion
Mushrooms
Yellow onion
Garlic
Parmesan cheese 

Tuesday:

Lunch:

Leftover risotto or chicken salad sandwich!

Dinner:

Crispy chicken tenders

Make with fingerling potatoes cut into fries and honey mustard sauce. Make sure you look at tomorrow night’s dinner. You can save yourself time by getting your parmesan chicken ready the night before!

Wednesday:

Lunch: Chicken cobb salad

Use the chicken tenders from the night before to use for your salad.

Corn
Bacon
Blue cheese
Tomato
Avocado
Lettuce

Dinner: Parmesan Chicken 

No additional ingredients needed from your crispy chicken tenders. Use marinara sauce if you do not want to make your own sauce. Make with angel hair spaghetti noodles.

Thursday:

Lunch: Leftover parmesan chicken, chicken salad sandwich, or chicken cobb salad.

Dinner: Chicken tacos

Make with Mexican rice and refried beans. This can be made in the crockpot and be done by the time you get home!

Friday:

Lunch: Chicken burrito bowl

Use the chicken from your tacos the night before to make a burrito bowl. Like Chipotle, add whatever ingredients sound good. Some examples could be tomato, onion, corn, salsa, lettuce, cilantro, avocado, and rice. 

Dinner: Beef fried rice

Eggs
Oranges
Peppers
Sweet peas
Onion
Rice
Beef broth
Beef
Garlic cloves
Variety of spices

Saturday:

Lunch: Whatever leftovers you have. That could be chicken salad sandwich, chicken cobb salad, a burrito bowl, or any other leftovers from dinners throughout the week.

Dinner: Beef stew

Make a salad and buttered rolls with this.

Frozen puff pastry
Beef
Diced tomato
Mixed veggies
Cornstarch

Sunday:

Lunch: Whatever leftovers you have. That could be chicken salad sandwich, chicken cobb salad, a burrito bowl, or any other leftovers from dinners throughout the week.

Dinner: Beef kabobs 

Serve with white rice, and since the grill is running, grill some peaches for dessert!
